Ingredients

  • 1 cup chickpea flour
  • 1 teaspoon baking powder

  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup finely chopped onions
  • 1/2 cup water
  • Vegetable oil for frying

Instructions

  1. In a large bowl, whisk together the chickpea flour, baking powder, salt, cumin, coriander, turmeric, and cayenne pepper (if using).
  2. Add the chopped onions and water to the bowl and stir until the batter is just combined.
  3. Heat a few inches of vegetable oil in a large pot or Dutch oven over medium-high heat.
  4. Drop spoonfuls of the batter into the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy.
  5. Drain the bhajis on paper towels and serve immediately.
